This is how sour beers are made: first, the brewery brews a Berliner Weisse or another style of a light beer. Than they take half a ton of raspberry purée and mix it in. Inoculated with lactobacillus, the beer creates its much desired freshness and the fruit settles at the bottom of the tank. Normally, it is discarded and goes to waste.
How unfortunate is that! Fruit with alcohol in it and they are throwing it away?
We called our favorite breweries and started collecting their beer-infused raspberries. After distilling we put it in a barrel and had the spirit settle down before dipping it into the same raspberry purée to add a little sourness and a touch of honey for balance.
